Have you seen this before?

Oh yes, the infamous green Jell-O salad that appears at every church potluck and on many grandmother’s holiday table. We’ve all seen it and, most likely tasted it. It’s one of those foods your either like or despise! Lime Jell-O, cottage cheese, evaporated milk, Duke’s (that’s mayonnaise), crushed pineapple and juice, walnuts, mixed together and chilled, that’s all it is!

I happen to like it as well as most congealed salads. If it appears on a potluck table, you can be sure that I take a helping! I rarely make it or any congealed salad, but when looking up a recipe I use for an orange congealed salad I remembered the green Jell-O salad and decided to make it for Easter dinner.

Since it was just going to be me for Easter this year I decided to chill it in an 8 x 8 inch dish rather than molding it. It was quite tasty even though I accidently bought cottage cheese with pineapple in it rather than the plain cottage cheese and one does not go to the grocery store on the Saturday afternoon before Easter to just get one item! This was a nice treat and although I plated it on a salad plate, I ate it after the meal as a dessert.

I have to think the infamous green Jell-o salad has to be one of the little simple things of life.

Yes, I am inclined to agree with you! I think it looks lovely plated on the dinnerware, and I always liked this one when you posted about the design. It is just so elegant and timeless! I think yours is prettier than any I have ever seen, and does look more like a fancy dessert. I remember my mother’s as sort of quishy, not firm nor so pretty, so I really think this is the way to go!

  2. Some call this “Watergate” salad. I do like it! But, like you, I don’t make it myself. I also like the orange version! The dinnerware is so elegant! Hope you had a nice Easter!
